Potato Soup

Yield: 8 servings


1 lb bacon, chopped
2 stalks celery, diced
1 onion, chopped
3 cloves garlic, minced
8 potatoes, peeled, cut into cubes
4 cups chicken stock
3 Tbsp butter
¼ cup all purpose flour
1 cup heavy cream
1 tsp tarragon
3 tsp cilantro, chopped
salt and pepper


  1.  Render bacon fat.
  2.  remove bacon and set aside.
  3.  In the bacon fat, sweat onion, garlic, and celery.
  4.  Add potatoes.
  5.  Add chicken stock to cover.
  6.  Boil and simmer until potatoes are tender.
  7.  In a separate pan, make roux with butter and flour.
  8.  Add heavy cream, tarragon, and cilantro. Mix.
  9.  Bring cream to boil.
  10.  Stir cream into Potatoes.
  11.  Puree half of the soup, and return to pan.
  12.  Season to taste.
  13.  Garnish with bacon.
