Tofu in Ginger Syrup

Yield: 8 servings

Ingredients:

For tofu pudding

500 mL soy milk
1 package gelatine (2 g)*
10 mL water

For ginger syrup

100 g brown sugar
300 mL water
50 g ginger

Procedure:

For tofu pudding

  1.  Dissolve gelatine into cold water.
  2.  Boil soy milk. Remove for heat.
  3.  (optional) Add sugar for more sweetness.
  4.  In a separate container, mix gelatine and soy milk.
  5.  cool and refrigerate. The result should be a very soft tofu that still holds its shape.

For ginger syrup

  1.  Peel and slice Ginger.
  2.  Boil brown sugar in water.
  3.  Add ginger. Simmer for 2 minutes.
  4.  Taste. If necessary continue simmering for stronger ginger flavor.
  5.  Remove ginger.

To Serve

  1.  Scoop tofu pudding into bowl.
  2.  Pour ginger syrup on top.

*Note: Gelatine is a substitute for traditional coagulant used in tofu shops. See nigari or magnesium chloride. [wikipedia.org/wiki/Tofu#Production]
